Weekend Recap!

This weekend was fabulous! I feel like I accomplished a lot by not doing much (if that's possible!).

Saturday morning John and Scout went on a hike in Santa Fe. It was snowing quite hard, so not surprisingly, I opted to stay home. The hike was about 3 hours, and it's a good thing that it wasn't much longer - John was wearing shorts!


Later that evening John's mom and step-dad took us to dinner to celebrate John's belated birthday. We went to a restaurant called Indigo Crow and it was fabulous! The restaurant was in a tiny old two-room house (called a casita) with a gorgeous fireplace - tons of character! ...And I am still dreaming about that yummy food and wine!

 

On Sunday, John went fly fishing for the day near Taos. He had to hike down a canyon to get to the river, and he said climbing back out carrying everything he had (waders, his fly rod, backpack, etc.) was one of the most physically difficult things he's done!

See that little river down there? Yeah... He hiked down there and back up - ick!

 

While John was out fishing, I made the most tasty avocado egg rolls with a dipping sauce (recipe coming soon!).

  3. Can't wait for that recipe girl! We are an avocado loving family 'round here! Plus anything you can make into a pouch is pretty much too fun not to eat it! Did John's hike take longer to walk than he spent fishing? Looks so far!!!! Happy Monday Friend!!!

  10. The pic of John with all that snow is too funny. My husband did similar things when we lived in CO, you get use to the cold but I still opted for pants myself. Oh, total aside story, while I was at uni (in CO) there was a guy that wore a Hawaiian shirt and shorts daily, rain/sun/snow whatever. Maybe he was from Hawaii but he certainly didn't look like it. Always found it odd.
    Um those egg rolls look awesome, I'm about to find something for lunch...I'd vote for those!

  18. Oh, I can't believe there was so much snow! John is so good for getting out in the great outdoors! Also, cannot WAIT for that avocado egg roll recipe girlie! YUM!
