This weekend was fabulous! I feel like I accomplished a lot by not doing much (if that's possible!).
Saturday morning John and Scout went on a hike in Santa Fe. It was snowing quite hard, so not surprisingly, I opted to stay home. The hike was about 3 hours, and it's a good thing that it wasn't much longer - John was wearing shorts!
Later that evening John's mom and step-dad took us to dinner to celebrate John's belated birthday. We went to a restaurant called Indigo Crow and it was fabulous! The restaurant was in a tiny old two-room house (called a casita) with a gorgeous fireplace - tons of character! ...And I am still dreaming about that yummy food and wine!
On Sunday, John went fly fishing for the day near Taos. He had to hike down a canyon to get to the river, and he said climbing back out carrying everything he had (waders, his fly rod, backpack, etc.) was one of the most physically difficult things he's done!
See that little river down there? Yeah... He hiked down there and back up - ick!
While John was out fishing, I made the most tasty avocado egg rolls with a dipping sauce (recipe coming soon!).
