Carrot Cake... For ONE!

John left for Texas last weekend, and I'm officially single-mommin' it with Scout!

As much as John and I share responsibilities around the home, the truth is, I could count on one hand the number of times that I've taken out the trash since we've been married... so needless to say, I am still getting the hang of things! ;)

Part of hanging solo also means that I am meal prepping for one (aka, if I'm not eating out, my meals consist of hummus and pretzels!).  So when I had a craving for carrot cake, I knew I had two options... bake a cake and eat the whole thing by myself - or, find a recipe for a single serving.

And as much as I would love to eat a whole carrot cake, I knew the single serving recipe was likely the better option... the best part?  All you need is a coffee mug and microwave!

What you need:
1/4 cup of flour
1 tbs of sugar
1/2 tsp of cinnamon
1/4 tsp of nutmeg
1/2 tsp of baking powder
dash of salt
1 tbs of coconut oil (melted)
1 1/2 tbs of milk
1/2 tsp of vanilla
1/4 cup of grated carrots

How to:
Combine all of the dry ingredients into a bowl and stir in the coconut oil, milk, and vanilla.
Finish by stirring in the carrots and pour into a lightly greased microwave-safe coffee mug.
Microwave for 90 seconds, and let fully cool.

Pop out of the coffee mug (or not!) and top with cream cheese frosting (or not!)

...and tada!
A single-serving of carrot cake!

  1. Genius!! Here hoping life flies by and you two are reunited soon.... because taking out the trash is my least favorite. :)

  2. This looks so good and I don't even care for carrot cake! But I think the recipes that always make me a little iffy like this are when they include egg, so I like that this one is just coconut oil and milk!

  3. YUM! This sounds amazing! And I feel you on the figuring things out. My husband has been out of town for 2 weeks now and remembering to take out the trash is not always easy!

  4. Look so delicious and I should treat myself to this when Gary travels...ps I haven't taken the trash out since we've been married LOL! xo, Biana -BlovedBoston

  5. Yum! Up until a few months ago I had never had carrot cake but now I love it! Anything with cream cheese is good!

  6. I don't really care for carrot cake (I'm not a spice or nutmeg person) but Dustin loves it, this is perfect for him! Pinned :)

  7. Oh wow, this looks SO GOOD!! My husband is not a fan of carrot cake, so this would be perfect for me... so I don't eat a whole cake ;) Pinning right now!

  8. That is genius, Lisa! I should do that instead of making a whole cake!

  9. Great idea!! I am so with you on the hummus and veggies for dinner. I laugh at how in college I could get by with a small salad and some veggies and now my hubby wants to make sure there's protein in every meal ;)

  10. For one! You had me at that! Love this :)

  11. How adorable, and such a smart idea! I have a feeling I'd be picking at a big cake all week, haha. Hope the trash situation works itself out and the time by yourself goes by fast!

  12. omg yummm i love love carrot cake :) xo jillian - cornflake dreams

  13. I did not even know this was possible! Pinned it and saved it for my husband's next trip away!

  14. I love these kinds of single-serving mug dessert recipes...definitely great for satisfying a quick craving!
